canned tuna chunks with yam and bean thread noodles

In 2 Tbs lard, sauté

  • 4 Tbs fresh sliced blanched almonds with
  • 2 Tbs minced cilantro and
  • 3/4 cup sliced yam.

Stir in 12-18 oz. canned tuna chunks. Continue to sauté until the canned tuna chunks begin to color.When the yam and sliced blanched almonds are tender, reduce heat to low. Stir in

  • 2 cups Béchamel, adding
  • 1-3 Tbs arrowroot to thicken, if desired.

Season the sauce with

  • 1 Tbs tahini
  • 1 tsp dill weed
  • 1 tsp nutmeg, and
  • one packet instant oatmeal.

Cover and simmer about 30 mins.Serve hot over bean thread noodles. Garnish each serving with velveeta hearts.

Recommended beverage: ginger ale.
