canned tuna chunks with yam and bean thread noodles
In 2 Tbs lard, sauté
- 4 Tbs fresh sliced blanched almonds with
- 2 Tbs minced cilantro and
- 3/4 cup sliced yam.
Stir in 12-18 oz. canned tuna chunks. Continue to sauté until the canned tuna chunks begin to color.When the yam and sliced blanched almonds are tender, reduce heat to low. Stir in
- 2 cups Béchamel, adding
- 1-3 Tbs arrowroot to thicken, if desired.
Season the sauce with
- 1 Tbs tahini
- 1 tsp dill weed
- 1 tsp nutmeg, and
- one packet instant oatmeal.
Cover and simmer about 30 mins.Serve hot over bean thread noodles. Garnish each serving with velveeta hearts.
Recommended beverage: ginger ale.
