tofu squares with sweet potato and boiled potatoes

In 2 Tbs bacon grease, sauté

  • 4 Tbs fresh scallions with
  • 2 Tbs sliced jalapeno and
  • 3/4 cup sliced sweet potato.

Stir in 12-18 oz. tofu squares. Continue to sauté until the tofu squares begin to color.When the sweet potato and scallions are tender, reduce heat to low. Stir in

  • 2 cups V-8 juice, adding
  • 1-3 Tbs rice flour to thicken, if desired.

Season the sauce with

  • 1 Tbs soy sauce
  • 1 tsp basil
  • 1 tsp thyme, and
  • one bouillon cube.

Cover and simmer about 30 mins.Serve hot over boiled potatoes. Garnish each serving with crumbled feta cheese.
