tofu squares with sweet potato and boiled potatoes
In 2 Tbs bacon grease, sauté
- 4 Tbs fresh scallions with
- 2 Tbs sliced jalapeno and
- 3/4 cup sliced sweet potato.
Stir in 12-18 oz. tofu squares. Continue to sauté until the tofu squares begin to color.When the sweet potato and scallions are tender, reduce heat to low. Stir in
- 2 cups V-8 juice, adding
- 1-3 Tbs rice flour to thicken, if desired.
Season the sauce with
- 1 Tbs soy sauce
- 1 tsp basil
- 1 tsp thyme, and
- one bouillon cube.
Cover and simmer about 30 mins.Serve hot over boiled potatoes. Garnish each serving with crumbled feta cheese.
